A new study focuses on the intake of toxic metals from gluten free products. This research shows that there is a downside to eating gluten free: bigger intake of toxic metals. This means that gluten-free foods might actually do more harm than good.
In order to replace rye, barley, and wheat, it is utilized rice flour. This ingredient is used for most of the gluten free products available on the market. The problem is that rice flour tends to accumulate a lot of mercury and arsenic from fertilizers.
In order to conduct this study, researchers analyzed thousands of people aged 5 to 80. They identified 73 people who mentioned that they eat only gluten free products. All of the people in the study were healthy.
The findings showed that people who eat only gluten-free products had twice the levels of arsenic compared to the ones who did not eat gluten free foods. These people also had 70% higher levels of mercury. These are considered toxic metals and they can be dangerous if they are found in large amounts in the body.
Normally, gluten free diets are only recommended for those who are intolerant to gluten or the ones who suffer from celiac disease. Despite the fact that only 1% of Americans are diagnosed with celiac disease, more than 25% of them reported eating gluten free food.
Many people believe that gluten free food reduces inflammation but no scientific proof shows that. The toxic metals that are found in gluten-free food can increase the risk of heart disease, neurological problems, and cancer.
The researchers have managed to shows that gluten-free diets can increase the intake of toxic metals. Despite the fact that gluten free foods might have more toxic metals, the researchers mentioned that they need to make more tests before they can be sure.
