A new study shows that tasting uncooked foods that contain flour, such as cookie dough, can make you ill. A research paper was published in The New England Journal of Medicine. According to it, tasting cookie dough can make you dangerously sick. This report recounts the work that led to a recall of 10 million pounds of flour in 2016. These had to be withdrawn from the market because they had E.coli bacteria.

Escherichia coli, more usually known simply as E.coli spreads easily in wet habitats like vegetables and meat. Researchers also observed that it could thrive in arid hosts such as flour. The study lead mentioned that people need to be aware of the risks before they decide to lick the remaining cookie dough from a spoon.
E.coli can spread uniformly in the bag of flour. Even just consuming a small amount could make a person feel very ill. This bacteria can be found in raw eggs, meat, and cookie dough. This is why it is better to cook meals that contain them, especially the latter, before tasting them. The E.coli bacterium can be killed at a specific temperature, which, in turn, makes the food safe to eat.
Other researchers mentioned that it is incredible how fast the bacteria can spread. They were also surprised at how long it can survive, even in an arid environment like flour. Most people seemingly believe that this bacteria can only be found in wet environments. It is true that it spreads faster there. Still, the bacteria can survive just as well in cookie dough made with infected flour.
People are also advised to wash their hands before and after handling flour and making the cookie dough. After that, they just have to let the oven heat do its job and kill the pathogens. The researchers mentioned that people shouldn’t be worried about commercial products like refrigerated cookie dough or cookie-dough ice cream. Since 2009, when 77 people contracted E. coli from flour, the ingredients in these products are pasteurized and heat-treated.
